Ingredients: 1 whole chicken
marinade: 1/2 L sprite
rub: a generous combination of pepper, salt, garlic powder, mrs. dash, onion powder
stuffing: 1 tbsp crushed ginger, diced tomatoes, and onions
baste: 1/4 c ketchup, 1/ 4 c soy sauce, a drizzle balsamic vinegar
Directions: *punch the chicken with invisible holes using a fork *marinate chicken in sprite for four hours (a tip I learned from Patricia) *generously rub the spice combination, especially the insides. chill overnight *insert stuffing and tie legs using a dental floss *bake at 400F, cover the chicken with foil in the first hour of baking *remove chicken and then baste *continue baking for another hour this time removing the foil cover except for the wings (ideally you should continue baking it at a lower temperature, 350-375F perhaps to avoid drying the chicken), *chicken will cook for about 2-2.5 hours or until internal temperature reaches 170F (if blood comes out when you poke the chicken, it is still uncooked) *remove from oven, let it rest for about 10-15 minutes. *garnish and serve

Ingredients: 1/2 lb chicken fillet, cut into strips 1/2 cup vegetable medley (i use frozen ones so i don't have to chop!) 1 tsp minced garlic 1 tbsp olive oil 1 tbsp sesame oil 2 tbsp oyster sauce sprinkle mrs. dash, black pepper, paprika
Directions: *saute minced garlic with olive oil *add chicken fillet *season with mrs. dash, black pepper, paprika, oyster sauce, and sesame oil *add vegetable medley *stir until cooked

Ingredients: 1/2 lb pork spare ribs 3 tbsp soy sauce 1 tbsp sesame oil 2 tsp sugar 2 tsp curry powder 2 pcs dried bay leaf 1 tsp all spice 2 tsp mrs dash a sprinkle of garlic powder, onion powder, paprika, and chili powder (you may add more chili to make it spicy)
Directions: *combine all ingredients *marinate for 15 minutes *microwave for 5 minutes *add half a cup water (taste and see if you need to add more spices) *continue cooking on stove top for about 30 minutes (you may add coconut milk if desired) 
Description: a casserole of chicken, mushroom, and pasta. this is my quickie version of ayen's recipe... (thanks ayen!)
Ingredients: 1/2 lb cooked farfalle (or any pasta that you fancy)
for the cream sauce: 2 tbsp butter 1 medium sized onion, minced 2 tsp garlic, minced 3 pcs chicken breast fillet, coarsely chopped into small cubes 1/4 cup button mushrooms, sliced thinly a dash of italian seasoning 1 can campbell's cream of mushroom 1/4 cup parmesan cheese, shredded
for the topping: 2 tbsp melted butter 1/4 cup parmesan cheese, shredded 1/4 cup italian bread crumbs
Directions: *cook farfalle (pasta of choice) and set aside
*boil chicken fillet with water, mrs. dash, salt (i added chicken cube) *coarsely chop the chicken fillet into tiny cubes once cooled, set aside
cream sauce: *saute minced onion and garlic with butter *add chicken and mushroom *add cream of mushroom (i added a little water to make it less thick) *add parmesan cheese
*combine pasta and cream sauce *prepare the topping by combining melted butter, crumbs, and cheese *sprinkle topping *bake at 350F for 15 minutes or until topping is brown

Directions: - marinate wings overnight - cook wings in marinade for about 20-30 minutes - deep fry - to crisp and brown, i roasted it on a 375F oven for about 15 minutes

Ingredients: 1 lb lean beef, diced 1 can beef broth 1 can water 1 tbsp ginger, crushed a dash of sugar, salt, pepper, garlic powder, your favorite seasoning diced/chopped vegetables (carrots, potatoes, celery) 1 beef cube
Directions: * rub beef with spices * let it set for about 5-10 minutes with the crushed ginger over low fire until juices come out, stirring continuously * add broth and water * cover and cook until tender, it would take about 1.5 hours. remember to check the meat and broth every 30 minutes. add water if you need to, just enough to cover the meat to prevent it from burning. * add spices, beef cubes, water (if needed) with the vegetables. * cook for about half an hour, still over low fire. * you may add leafy veggies or tomato sauce to create the stew you want

for the mashed potato: * combine all ingredients and mash potatoes until creamy
shepherd's pie: * preheat oven at 350F * pour ground beef mixture on to baking dish * cover with mashed potato * bake for about 20 minutes

Description: Inspired by Pat's chicken curry blog and Ayen's curry recipe, I attempted to do my own version with the spices I have in my pantry. This is not for the spice fanatics, you will be disappointed unless you use a very special curry powder/paste with some chili powder and other authentic Indian spices. But for Pinoys this is just perfect, I guess.
Ingredients: * 8 pcs chicken wings * 2 tsp salt * 1 tsp sugar * 2 tsp black pepper * 2 tsp chicken powder (chicken seasoning) * 1 medium sized tomato, diced * 1 tsp garlic, minced * 2 tbsp onion, minced * 1 can coconut milk (approx 13 oz) * 1-2 pcs potato, diced * 1 medium sized eggplant, diced * 2-3 tbsp black pepper, freshly grounded (I was desperate to make it spicy, so I don't really know how much I used) * 1 tsp cinnamon powder * 1 tsp all spice * 1 tsp coriander * 2-3 tbsp curry powder (again, very desperate to taste something spicy) * 1 tbsp salt (taste and see if you need to add more)
[I really wish I had that chili powder to make it spicy]
Directions: * Rub chicken wings with salt, chicken powder, black pepper and let stand for about an hour. * Saute garlic, onions, tomatoes and chicken wings for about 15 minutes until juices come out * Add coconut milk with the potatoes and eggplants * Add curry powder and the rest of the spices (add 1 tsp at a time, add some more every after 5 minutes until you achieve the desired taste) * Continue cooking for about 20-30 minutes, until meat is cooked and potatoes are tender.
----- Before I added the coconut milk, I deep fried five pieces of the marinated and sauteed chicken wings. It was very tasty with all that flavor from the chicken rub and sauteed spices. So, with the same ingredients I made two dishes ;-)

Description: I tried to double the recipe of my mother's maja blanca and noted some changes coz here I use the canned coconut milk instead of the fresh ones.
Ingredients: 2 cans coconut milk (approx 13 oz each can) 1 1/2 cup water 1 can evaporated milk (approx 12 oz) 1 1/2 cup cornstarch 2 cups sugar 1 can cream style sweet corn (approx 12 oz) a drop of vanilla extract
Directions: * combine all ingredients except the sweet corn * cook over low fire, stirring continuously for about 15 minutes * add corn, continue stirring until thick for about 5 minutes * pour over molds (for this recipe i used 4 pcs of 5X7" plastic wares) * cool then refrigerate 
Ingredients: * 1/b beef, thinly sliced (I used beef stew cuts) * 1 tsp soy sauce * 2 tsp seasoned soy sauce * 2 tsp vinegar * 1 tsp sugar * a dash of black pepper, paprika, garlic powder * 1 tsp garlic, minced * 1 medium sized onion, cut into rings

Ingredients: 1/2 lb beef stew cuts, sliced thinly 2 tsp soy sauce 1 tsp seasoned soy sauce for seafood (I just had to use it hehe) a dash of sugar, black pepper, paprika, garlic powder 1 tsp ginger root 1 tsp garlic, minced 1 tbsp onion, minced 1 tbsp green onions, chopped 1/2 cup gingerale 1 cup green onions, french style cut (diagonal thin strips) 1 tbsp ketchup
Directions: * marinate beef with soy sauce and spices for about 30 minutes to an hour * saute garlic, onion and beef with ginger for about 10 minutes until juices come out * add gingerale enough to cover meat * cook in low fire for about 15 minutes * add green onions, green beans (more salt and pepper to taste if you want) * add ketchup * let stand for about 10 minutes
serve with steamed rice =D 
Description: roasted chicken strips and vegetables in creamy mushroom sauce
Ingredients: 1 cup of roasted chicken, sliced into strips (you may dice it if you like) 2 cups vegetables (brocolli, cauliflower, carrots, etc) 2 tbsp butter or 1 tsp oil 1 can of cream of mushroom soup (campbell's) 1 cup water salt and pepper to taste
Directions: * saute vegetables in butter * add roasted chicken strips * add cream of mushroom and water * cover and let stand for about 15 minutes * add salt and pepper to taste

Description: diced pork and potatoes in tomato sauce
Ingredients: 2 slices of boneless pork chops, diced 2 medium sized potatoes, diced 2 tbsp soy sauce (i used seasoned soy sauce for seafood) a dash of garlic powder, paprika, black pepper, salt, and sugar 2 cups of water 2 tbsp tomato ketchup
Directions: * marinate diced pork in soy sauce, garlic powder, paprika, black pepper, sugar, and salt for about an hour * saute pork with marinade for about 10 minutes just when the pork gets tender and the juices come out * once juices are reduced, add water and potatoes * cover and cook for about half an hour * once cooked (potatoes and pork are tender enough), add bit of salt and sugar according to your taste * add ketchup and let simmer for about 10-15 minutes
variations: you may add liver and gizzard too. cook gizzard with pork and potatoes. add liver much later, it cooks rather fast. you may add carrots too.

Ingredients: a slice of pork chop (you may dice it if you feel like it) 1 tsp crushed ginger dash of salt, black pepper, garlic powder 1 can french onion soup (with a can of water) 1/2 cup assorted vegetables (I used frozen stew vegetables!)
Directions: * rub pork with salt, pepper, and garlic powder * brown pork with ginger on a medium heated pan/pot, for 3-5 minutes until juices come out * add french onion soup with water and the vegtables * boil for 30 minutes over low fire ;-)

Ingredients: 1/2 lb lean pork cubes 1/2 c green beans, french cut (I used the frozen ones) 3 tbsp soy sauce 1 tsp garlic powder 1 tsp black pepper 3 tbsp cooking oil 1 tsp minced garlic 1 medium onion, minced 1 tbsp sugar 2 tbsp ketchup
Directions: * marinate pork cubes with soy sauce, garlic powder, and black pepper for about 15-30 minutes. * saute minced garlic and onions * add marinated pork with marinade and green beans * cook for about 20 mins, stirring occasionally * add sugar and ketchup * cook for about 10-15 mins more until marinade has thickened
serve over a bowl of steamed rice!

Ingredients: 1 cup of monggo beans 2 cups water 1 lb pork, cubed 1 average sized tomato, diced 1 average sized onion, diced 1 tsp garlic, minced a drizzle of soy sauce, worcestershire sauce a dash of black pepper, paprika 1/2 tsp rosemary 1 can condensed french onion soup (campbell's) 1/z cup coconut milk
Directions: * marinate pork with soy sauce, worcestershire, black pepper, paprika for about 15-30 minutes * at the same time boil the monggo beans with water for about 30-40 minutes * saute garlic, onions, tomatoes on a separate pot * add the marinated pork and cook for about 10-15 minutes until tender * add the french onion soup, if condensed don't forget to add water * add the rosemary or any spice to your liking * add the coconut milk and cook for about 10 more minutes
best served with steamed rice and buwad. oh yum!
